Ingredients
- 4 chicken breast
- 1 med onion
- 3 Tab Olive Oil
- 1/2 cup chopped Basil
- 1/4 cup chopped sundried Tomatoes
- 4-6 Cloves Garlic
- Rosemary to taste
- Thyme to taste
- Salt (Himalayan Pink Salt recommended)
- Pepper -to taste
Preheat oven to 375 degrees
Preparation:
Slice Chicken breast into 4 slices
Make a bed of sliced onions with just enough water to cover bottom
Pesto:
- Mix- olive oil, basil, garlic, sundried tomatoes, chopped up and mixed together.
Top the chicken with this Pesto mix, getting in all the cuts of the breasts.
Season to taste with:
- Thyme
- Rosemary
- Salt
- Pepper
Bake for 35-45 min until done through and tender. May need to add small amounts of water to keep moist.
